Situado en Collado Villalba, en el corazón de la sierra Noroeste de Madrid, El Gallinero es un rincón ideal para paladares exigentes, donde se puede disfrutar de un amplio abanico gastronómico de la mejor calidad en un entorno diferente y de gran belleza natural.
El Gallinero está emplazado en una finca rústica, antigua propiedad del Marqués de Pelayo, aristócrata apasionado por la serranía madrileña que disfrutaba con los bellos atardeceres y el agradable clima de la zona.
El espacio interior combina la tradición con la modernidad dotando al lugar de una personalidad propia. En la misma entrada nos llama la atención la armónica combinación de madera natural y piedra que se alzan hasta un alto techo abuhardillado con amplias vigas dotando a la sala, que alberga uno de los salones y la barra, de un carácter singular y de un cálido entorno en las épocas más frías del año.
La cuidada gastronomía que nos ofrece el Restaurante El Gallinero guarda los cánones de la alta cocina tradicional, aportando toques personales que nacen de la inspiración diaria, teniendo muy en cuenta la época del año y los productos estrella que cada estación proporciona.
Los platos más tradicionales, como puede ser el cordero, conviven en la carta con nuevas creaciones que nacen de la creatividad compartida del equipo de cocina, para satisfacer todo tipo de paladares. Las materias primas, de excelente calidad, proceden en la mayoría de los casos directamente de sus puntos de origen, como ocurre con los pescados y con la carne de la sierra del Guadarrama.
